Ginger Marinated Grassfed Steaks with Stir-Fried Vegetables & Jasmine Rice

Blue Apron January 2018 Meal Review

With the arrival of 2018 I have a few things I want to simplify in my life. One of those things being time management. When I’m running behind I end up skimping on details in order to shave off a few minutes here and there. What better way to free up some time by saying “so-long” to torturous big-shop weekly grocery trips.

The instructions had several aspects that kept my enthusiasm on an upward trend. It’s large print, full of colorful photos, and very intuitive.

And do I need to even shout out the wine pairing hints provided.

First order of business was to create a marinade for our steaks.

This called for the ginger to be peeled and finely chopped.

Into a glass bowl little gingers.

Add the pre-measured ponzu and soy sauce, and a little salt & pepper.

In go our steaks to soak up all that flavor.

Our recipe and prep card tells us the next step, which is to prepare the rice.  Now that’s the time management skill I’m talking about!

And while the rice is steaming you wash and chop your vegetables for the stir-fry.

Just some fresh baby bok soy, radishes, cremini mushrooms, and a shallot. Blue Apron makes me feel so gourmet (p.s. the “t” is silent)

These had been sitting in my refrigerator for probably about 3 or 4 days and look how fresh they are.

And let’s not forget those who like it hot. This birds eye chili pepper was included just in case you want to turn up the heat a bit.

Look at all those seeds!

I like it mildly zippy so I’m removing the seeds and giving it a good dice.

Shall we stir-fry? Add a bit of oil to a skillet and let it heat…

In go the cremini mushrooms to the hot oil for a little sizzle.

Once the mushrooms have a nice brown to them you simply throw in the rest of the veggies.

While those are stir-fryin prepare your radishes. Why? I’m not sure because in my opinion radishes aren’t usually the standout “hit it outta the ballpark” flavor in any dish.

But they sure are pretty.

Remove the vegetables, add a bit of the vinegar, salt & pepper and TA-daaaa we have stir fried vegetables.Gorgeous, absolutely gorgeous!

Steak Time! Add a bit more oil to your pan and once it’s hot add your steaks.

Sear’ously!!!

Blue Apron January 2018 Meal Review

I believe I achieved a really great sear for an unaccomplished meat cooker. However I like my steak cooked through so I’m unsure at this point if I will need to return them to the pan to cook further. But dang these sure looked purty.

C’mon Society the sauce isn’t going to make itself…well actually it kinda does.

Just add to the remaining marinade a little sugar and water.

And simply incorporate into all those brown crispy burnt bits in the steak pan.

Blue Apron January 2018 Meal Review

Get it good and hot scraping up all those little bits while you stir continuously until it thickens to a mouth-watering and worthy sauce for those steaks.

And then plate it and get ready to wow your family!

Blue Apron January 2018 Meal Review

And would you look at that sauce?

Blue Apron January 2018 Meal Review

I loved the vegetables and my family loved the steak (I’m not a huge meat eater). Blue Apron you nailed it!

The recipe card indicates it takes 40-50 minutes and it took me about 40 minutes. This made it really easy for me to plan and be prepared for the time I would need to make dinner.

I have to tell you Society, I believe this was one of the most lovely meals to watch come together. It’s so vibrantly visually stunning. For those of you who like to lots of colors in your meals like I do, this is a fantastic example on how to eat all your colors.

Welcome, Subscription Box Society readers, thanks for stopping by. I'm Erin and here's a bit about me, in the 3rd person, naturally. Erin's a wife & mom of 3, a girl and twin boys. She spent most her life in San Francisco Bay Area but now lives in Colorado. She loves the first snow of the season, but not as much as the last one. She loves decorating her home for each season, loves good food, scratch that – ALL food, and reality TV. She despises putting away the laundry, being in the car when her husband is driving, and hearing her own voice. But really the only noteworthy detail here is her fascination with the brilliance behind subscription boxes. Welcome to the Society!
