Mongolian Beef with Jade Rice
This recipe from my SUN BASKET meal subscription had me all a flutter in anticipation of getting closer than I’ve ever been before the good ole PF Chang’s Mongolian Beef.

Shall we get started,? Yes, let’s!
Did you know there’s a tenderizing secret to meat? There sure is my fellow society culinary novices. It’s Baking Soda – If you mix baking soda with your meat and let it do its magic for a bit (10 minutes in this case) the alkaline properties prevent the meat proteins from bonding.
Say Whaaaat? Uhhh ok, sure I’ll give it a try.
Anywhoo – while your meat proteins do their thing let’s get this jade rice started.

Who knew rice came in such a majestic green hue? SUN BASKET did, jade rice just became my new favorite rice.
If you’re curious how jade rice gets this lovely color…it’s dyed with bamboo juice.

While our rice cooks our SUN BASKET instructions lead us into the next step which is our vegetables.
Some scallions (aka green or spring onions), a white onion, and an optional chili pepper.
Just slice them up and then place them to the side where they can chill and unwind for a bit.

Time to attend to our beef.
You’ll need to rinse your baking soda’ed meat really well. Not because if left un-rinsed it will hurt you, but it will taste kind of funny.
And then salt & pepper it.
The next step which is to cook up our steak could have been performed in either a pan or a wok. I have a wok but I rarely use it.
Reason 1. because it’s large with a wide opening therefore usually stored at the bottom of the kitchen cabinet, filled with the smaller variety pots and pans.
Reason 2. because I think it’s a pain in the arse to clean.
Hence the skillet.

Once your Mongolian Beef has a nice mongo brown to it, it must come out of the skillet so we can cook our veggies.
Here’s when SUN BASKET won me over – DON’T CLEAN OUT THE PAN.
Simply add a little more oil heat and sauté.
Once these are all nice and shiny we add the makings for a great Mongolian sauce.
I’m looking forward to finding out more about the possibilities offered to me with this new element (to me anyway) of coconut sugar.
We add our beef back into this gorgeous fragrant sauce and let the seared beef strips to cook a bit longer until the meat it fully done.
You see, I was supposed to sear the meat but I sort of screwed “my sear” up.

All cooked? Great – let’s add the spinach.
…just until wilted.

Alright, I’m not going mislead anyone in the Society and claim this SUN BASKET Mongolian Beef recipe became my doppelganger PF Chang’s Mongolian beef. What it did do is offer me a healthier skinnier version and introduce me to the most wonderful rice in the World, yes Society – “The World”.
